The regular service for my Genesis GV70 is just around the corner and since it's still under warranty I'll be taking it to the dealer, so that's not my problem. I was wondering about how dealers sit with aftermarket parts? For example, I wanted a high flow air filter, but I'm not sure if I should even bother with this? Or should I let them put those paper things and then replace the filter myself?

Dealers usually won't void your warranty just for using aftermarket parts like a high-flow air filter, unless it causes a problem...to play it safe, let them use the OEM filter, then swap yours in later
